Soya Potato Curry


Soya chunks is a source of immense protein, and can be used in a variety of dishes that is spicy and tasty. Specially people who like non vegetarian like soya, coz of its meat like texture. 
How to cook Soya Potato Curry...
What you need: 

Potato – 3 no.s (boiled and smashed)
Soya Chunks – 10 no.s
Onion (large) – 1 (finely chopped)
Tomatoes – 1 (chopped)
Green Chillies – 3 (slit)
Garlic pods – 4 (mashed along with skin)
Curry leaves – 10 – 12 no.s
Turmeric powder – 1 1/2 tsp
Mustard seeds – 1/2 tsp
Salt – as reqd.
Oil – to fry
Method:
Soak soya chinks in hot water for 10 minutes.
Squeeze out the water from chunks and peel into 2 to 3 pieces
Heat oil in a frying pan
Splutter mustard seeds
Add chopped onions, slit green chillies, curry leaves and mashed garlic.
When onion becomes glossy add the tomatoes.
When tomatoes get cooked mash them with the ladle
Add turmeric, salt and mix well
Add boiled potatoes and soya chunks and stir fry till everything gets fried.
It should take 7 to 10 minutes. Soya chunks will be cooked thoroughly once it absorbs the gravy.
Serve well with rotis or naan.
